Recipe for cheesey Biscuits

New Section - Recipe corner
I’ve long thought that it might be fun to have a recipe area on the blog. Probably the most useful thing would be quick and easy family recipes along the lines of “What shall we have for dinner tonight?”. However, after having been badgered by several people for the following recipe, I’ll kick off with some easy and delicious little cheesey biscuits. Sorry that there isn't a picture - but the kids polished them off before I had a chance to snap them!

Blue Cheese & Sesame biscuits
(makes c.25)
recipe doubles or triples up very easily

110gm self raising flour
85gm unsalted butter
85gm dolcelatte or bleu d’auvergne*
50gm grated parmesan
optional: dash of cayenne pepper
sesame seeds
* If you don’t want too strong a blue cheese flavour you can drop this down to 50gm and add in 35gm of something like gruyere, comte or emmental according to your taste

In a food processor, Pulse the first four ingredients until starting to ball together. Tip out and gently knead into a ball or roll. Cling film and rest in fridge for at least an hour (if longer, take out for a bit before trying to form the balls).
Make cherry-sized balls of the dough and then roll them in the sesame seeds. At this stage they can be frozen if you like. Defrost before cooking.
Put the balls on a baking sheet and flatten slightly with a thumb or finger.
Bake for c.10 mins at fan oven 190C or until light golden brown. Cool on a rack to crisp up a bit. Delicious whilst still slightly warm
